The fall season has just started, the cold weather, rainy days and strong wind tend to put us in a bad mood. So the question is, how do we romanticize fall and the rainy season? Today we have a recipe to sweeten up these long days. We all know the famous pumpkin spice latte appearing in all coffee shops this time of the year. One of the things for which we impatiently wait for is Halloween, and no, it is not only for kids. And what is Halloween without a big, orange pumpkin? Ladies and Gentlemen, we proudly present you with the great, amazing and delicious pumpkin Cheesecake. But not only is it great, amazing and delicious, it is also modernly vegan and non-bake. Vegan Cheesecake
Ingredients: For the pecan-date crust: ● 1 ½ cups pitted dates soaked in hot water for 10 minutes ● 1 ½ cups pecans chopped ● 1 tsp ground cinnamon ● 1 tsp ground ginger ● Pinch salt
For the vegan pumpkin cheesecake filling: ● 2 cups raw cashews soaked in water 4 to 8 hours ● 1 cup pumpkin puree ● ⅔ cup coconut oil melted ● ⅓ cup maple syrup ● 2 tsp vanilla extract ● 2 tsp ground cinnamon ● 1 tsp ground ginger ● ½ tsp ground nutmeg ● ¼ tsp ground cloves ● ¼ tsp salt
Instructions:
Lightly oil the bottom of a 9-inch springform pan.
Place all ingredients for the crust into the food processor.
Pulse until finely chopped.
Press the mixture into the pan.
Make the cheesecake filling by placing all ingredients into the food processor bowl, then blend until smooth.
Pour the filling mixture over the crust and smooth out the top.
Place the pan into the refrigerator and chill for about 4 hours.
Pumpkin Spice Latte
Ingredients: Pumpkin spice syrup (8 portions) ● 1½ cups sugar ● 1½ cups water ● 6 cinnamon sticks ● 1 tsp ground cloves ● 1 tsp ground ginger ● 2 tsp ground nutmeg ● 4 Tbsp pumpkin purée
Pumpkin spice Latte ● 1 cup whole milk ● 1 shot of espresso ● 3 tbsp Homemade Pumpkin Spice Syrup ● ½ cup whipped cream ● 1 pinch pumpkin pie spice (garnish) ● Cinnamon
Instructions: Homemade Pumpkin Spice Syrup
Combine sugar and water and bring to a simmer.
Once sugar is dissolved, add cinnamon sticks, ground cloves, ginger, nutmeg and pumpkin purée, and let simmer for 20 minutes.
Remove from heat and immediately strain through cheesecloth.
Pumpkin Spice Latte
Heat and froth milk.
Brew your espresso shot.
Place Homemade Pumpkin Spice Syrup into a mug, followed by hot espresso. Stir together.
Fill the mug with heated frothed milk until ¾ full, then top with whipped cream.
Sprinkle it with pumpkin pie spice!
